TAMATAR KI CHUTNEY

Medium sized tomatoes
Teaspoon ajwain (carom seeds)
Asafetida (hing)
Tablespoon garlic, grated
Teaspoon chili powder
Teaspoon sugar
Tablespoons oil
Salt to taste

Directions:

1.        Blanch the tomatoes in hot water. Peel and purée in a liquidizer.

2.        Heat the oil in a pan; add the ajwain and asafetida and sauté for 30 seconds.

3.        Add the garlic and sauté for a few seconds.

4.        Add the pureed tomatoes, chili powder, sugar and salt and bring to a boil.

5.        Simmer for 20 minutes or till the oil has separated. Cool and use as required.
